Our Mother's Day Meal

Favorite foods from Appalachia

Yesterday we cooked a Mother's Day supper for Granny and Miss Cindy. As I was cooking, I wondered if there was anything that I could snap a few photos of and share the recipe with you. 

While I was wondering I was reminded of the bit Grandpa Jones did on Hee Haw  "What's for Supper?" A little googling around turned up this video and led me to discover someone has created a Facebook page dedicated to the man and the bit, Grandpa Jones, What's for Supper?

Here's we had:

  • Baked pork roast with potatoes and carrots 
  • Sweet corn from the freezer that we put up last summer
  • Deviled eggs 
  • Macaroni and cheese
  • Miss Cindy's homemade bread
  • Homemade sponge cake with strawberries and whipped cream

I called our Christian Radio Station today to compliment Donna Lynn on playing good Gospel Music, and before she went off she played "Angels Rock Me to Sleep" by my favorite, The Pressley Girls. Funny thing is I didn't even ask for it. ...Ken

Hey Tipper:

WOULD LOVE TO MAKE these events! But right now I am down but not quiet out! However during the rupture of my appendix and EMERGENCY SURGERY, I was way too close. After removal of my appendix and several days of 'close' attention, I am now able to sit quietly in THE GARDENS OF EVA and just be grateful to be alive.

On June 3rd, I will be in Waynesville for a "Fiddler of the Mountains" reading and signing! Maybe YOU HAVE FRIENDS IN HIGH PLACES in Waynesville and you can share that June 3rd event with them!!!
That June day is our Joey's birthday. At age 17 and three days, he was killed in a car accident. I will do better to be in Waynesville - and 'busy' rather than being in my back yard on that day!

What a Mother's Day memory to have a Mother's Day meal with your mommy and mother-in-law. That is a real good-lookin' Appalachian dinner. Family is everything! Since we were pressed for time, we got something at McDonald's. My girls had to leave early this time, but plan to be here again for the August eclipse. A Solar Eclipse is centered right here in Andrews and Murphy and all the motels are taken already. ...Ken

That bread looks wonderful. Now you have caused me to want a good thrift store bread machine. Just stick me on an island with ingredients for different types of bread. Homemade bread is better because we don't add all those unpronounceable ingredients that are so bad for health. I have also started experimenting with other types of flour such as Cassava, Almond, and Arrowroot. There have been amazing results but never as tasty as a simple biscuit or yeast bread

In your post about the sponge cake you asked about the difference between that and angel food cake. It is the leavening agents, the angel food uses only whipped egg whites while the sponge uses a combination of salt, eggs and cream of tartar.

As they used to say on HeeHaw, yum yum. Everything sounds really good and looks really good also. No such luck here. We were on the road.

It was a wonderful meal, Tip. You and the Deer Hunter are both wonderful cooks. The Roast Pork the Deer Hunter made was outstanding!
It was a real treat to be cooked for and honored on Mother's Day, Thank you! You all are the best family in the world!

Love the recipes! Most of these dishes are just made by memory by the cooks. I
can remember my sister getting my mother to write down recipes in a book before my mother got very ill. My mother did not use a specific recipe and as she aged of her dishes were always a surprise! Happy Mother's Day and thanks again for sharing your memories. Life in the mountains will always be of fond memories for me.
